Blending up some Summer Squash “Ice Cream”

For a while now, I’ve been looking for a good healthy alternative to ice cream. I helped my father open up an ice cream store nine years ago, and I have been working there ever since, making and serving the creamy, heavenly goodness. It’s one of the things I miss the most while on this diet. Every dairy-free recipe I’ve come across, such as those which use bananas or coconuts, are still very high in sugar and carbohydrates. For those looking for an even healthier and still delicious alternative, I’ve come up with this: Summer Squash “Ice Cream.”

It’s fairly quick and incredibly easy, and might just satisfy your cool craving. I know it did for me. Here’s how to make it:

While you can use basically any kind of squash for this, I’ve found that summer squash are the lowest in sugar and such. The best options are Yellow Summer Squash and Zucchini. Summer squash also has the least of its own unique flavor, which makes for a great base to experiment with.

While it’s not that sweet, for obvious reasons, it definitely gets the job done. The texture is a bit more on the side of an Italian Ice, sorbet, or granita, but it definitely does the trick.

It’s Vegan, Gluten-Free, Dairy-Free, Egg-Free, Low-Carb, Low-Sugar, and just about everything you can ask for in order to work for just about any diet and lifestyle.

Total Cooking Time: ~ 4 Hours
Baking Time: 35 Minutes
Cooling Time: 10 Minutes
Prep Time: 10 Minutes
Freezing Time: ~ 3 Hours

Plain Summer Squash “Ice Cream” Base
Makes approximately 1.5 Cups (2 servings)

Ingredients:
2 Large Zucchini or Yellow Summer Squash – each approximately 8 ounces

Recipe:
Preheat oven at 250F
Bake squash for approximately 35 minutes, or until warm and soft
Let cool for 10 minutes
Optional
: Peel Squash – Be careful, they will be very hot; wear an insulated glove

(Otherwise, just leave the skin on for more color and nutrients)
Roughly chop, then blend or mash until even and smooth
(Mix in additions depending on the flavor you chose)
Freeze for approximately 3 hours
Mix again until smooth and enjoy

This makes a great base to customize to your particular tastes. Here are some of the flavors I came up with so far. Follow the same directions for preparation of the base; just change the additions and then freeze. Feel free to substitute or exclude any of the additions, spices or flavors you don’t like or want. Cinnamon Spice Summer Squash “Ice Cream”
1.5 cups Plain Summer Squash “Ice Cream” Base
½ teaspoon Cinnamon
¼ teaspoon Nutmeg
¼ teaspoon Ginger

Vanilla Chocolate Chunk Summer Squash “Ice Cream”
1.5 cups Plain Summer Squash “Ice Cream” Base
½ teaspoon Pure Vanilla Extract
1 ounce 100% Cocoa Dark Chocolate Bar – Roughly Chopped

Dark Chocolate Summer Squash “Ice Cream”
1.5 cups Plain Summer Squash “Ice Cream” Base
½ teaspoon Cocoa Powder
¼ teaspoon Cinnamon

Dark Chocolate Chunk Summer Squash “Ice Cream”
1.5 cups Plain Summer Squash “Ice Cream” Base
½ teaspoon Cocoa Powder
¼ teaspoon Cinnamon
1 ounce 100% Cocoa Dark Chocolate Bar – Roughly Chopped

Hot Chocolate Summer Squash “Ice Cream”
1.5 cups Plain Summer Squash “Ice Cream” Base
½ teaspoon Cocoa Powder
¼ teaspoon Allspice
¼ teaspoon Cayenne Pepper

(CAUTION: This is pretty spicy, but delicious)

Olive Oil Summer Squash “Ice Cream
1.5 cups Plain Summer Squash “Ice Cream” Base
3 teaspoons Extra Virgin Olive Oil

Blueberry Summer Squash “Ice Cream”
1.5 cups Plain Summer Squash “Ice Cream” Base
4 ounces Blueberries
½ teaspoon Lemon Juice
(Blend until smooth)

Red Raspberry Summer Squash “Ice Cream”
1.5 cups Plain Summer Squash “Ice Cream” Base
4 ounces Red Raspberries
½ teaspoon Lemon Juice
(Blend until smooth)

Almond Summer Squash “Ice Cream”
1.5 cups Plain Summer Squash “Ice Cream” Base
2 ounces Roughly Chopped Raw Unsalted Almonds – Approximately 50
½ teaspoon Cinnamon
½ teaspoon Nutmeg

For even more deliciousness, melt 1 ounce 100% Cocoa Dark Chocolate Bar and pour on top of any of these.
