Squash Skin Chips

While making my Summer Squash “Ice Cream,” I did not want to throw out the peels for all the zucchini I used.  Instead I came up with this great way to turn the skin, which would otherwise be abandoned, into a delicious and healthy snack.

Instead of potato chips, try out this low-carb, low-sugar, baked alternative.

Almond Summer Squash “Oatmeal”

Oatmeal was always one of my favorite breakfasts and snacks. It’s quick, easy, filling, and delicious. After giving up grains, however, I’ve wanted to come up with something to fill this gap. Summer Squash “Ice Cream”

For a while now, I’ve been looking for a good healthy alternative to ice cream. I helped my father open up an ice cream store nine years ago, and I have been working there ever since, making and serving the creamy, heavenly goodness. It’s one of the things I miss the most while on this diet. Every dairy-free recipe I’ve come across, such as those which use bananas or coconuts, are still very high in sugar and carbohydrates. For those looking for an even healthier and still delicious alternative, I’ve come up with this: Summer Squash “Ice Cream.”

It’s fairly quick and incredibly easy, and might just satisfy your cool craving. I know it did for me. Here’s how to make it:

Fake Foods, or Healthy Alternatives

When I started this lifestyle, I was completely opposed to fake foods, or healthy diet-friendly alternatives to the unhealthy “foods” that I used to eat. I didn’t like the idea of making fake ice cream, or fake mashed potatoes or anything like that, because I wanted to appreciate the food that I was eating for what it was. I thought that eating fake versions of my weaknesses would just make me give in to temptation more. I’d much rather try to overcome this and build up my willpower.

But at a certain point, I found myself craving certain foods more and more, and falling into the terrible habit of more frequent cheat days. In order to save myself, appeal to others, and help those who were doing the same, I caved and decided to try my hand at making some alternatives.
